The Brown Butter Baddie is a rich, rebellious take on the chocolate chip cookie, perfected with a deep, complex flavour that's both nutty and caramelised. With a soft, chewy centre and perfect crispy edges, she's our most wanted cookie. The only thing she's guilty of is being dangerously good.

Baking Tips for Cookie Dough

Make every batch a masterpiece.

Brown Butter Baddie (Chocolate Chip)

Oven temp: 180°C (fan-forced) or 190°C (conventional).
Bake time: 16–20 minutes.
Look for: Golden edges, slightly soft centre. They’ll firm up as they cool.
Extra tip: For a gooey middle, pull them out closer to 16 mins. For crunchier edges, leave them a touch longer.

White Heat (White Chocolate, Paprika & Cinnamon)

Oven temp: 180°C (fan-forced) or 190°C (conventional).
Bake time: 18–22 minutes.
Look for: Crackled tops.
Extra tip: The spices develop more flavour as they cool, wait at least 10 mins before eating (if you can).
